Southwestern Black Bean Salad
Southwestern Black Bean Salad is zesty, filling, and refreshing. This colorful salad combines the flavors of black beans, corn, avocado, and a tangy lime dressing for a delightful Southwestern-inspired dish.
Ingredients:
- 2 cans black beans, drained and rinsed
- 1 cup corn kernels fresh or frozen
- 1 red bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 avocado, diced
- 1/4 cup lime juice
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
Instructions:
In a large bowl, combine black beans, corn, red bell pepper, cherry tomatoes, red onion, cilantro, and avocado
In a separate small bowl, whisk together lime juice, olive oil, ground cumin, chili powder, salt, and pepper
Pour the dressing over the salad and toss to coat all ingredients evenly
Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld
