Keto Brussels Sprouts with Chestnuts & Pancetta



A flavorful and keto-friendly side dish featuring roasted Brussels sprouts tossed with crispy pancetta and savory chestnuts.

Ingredients:

  • 1 lb Brussels sprouts, trimmed and halved
  • 1/2 cup cooked chestnuts, roughly chopped
  • 4 oz pancetta, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh thyme leaves for garnish optional

Instructions:

Preheat oven to 400F 200C

In a large bowl, toss Brussels sprouts with olive oil, minced garlic, salt, and pepper until evenly coated

Spread Brussels sprouts on a baking sheet in a single layer

Roast in the preheated oven for 20-25 minutes, or until sprouts are tender and slightly browned, stirring halfway through

While Brussels sprouts are roasting, heat a skillet over medium heat

Add diced pancetta and cook until crispy, about 5-7 minutes

Once Brussels sprouts are done, transfer them to a serving dish and sprinkle with cooked pancetta and chopped chestnuts

Garnish with fresh thyme leaves if desired, and serve hot
