Coconut Muffins
Ingredients:
- 1 cups all-purpose flour
- 1 cup shredded coconut
- cup granulated sugar
- 2 tsp baking powder
- tsp salt
- 1 cup coconut milk
- cup vegetable oil
- 1 tsp vanilla extract
- 1 large egg
- cup sweetened flaked coconut for topping
Instructions:
Start by heating the oven to 350F 175C
You can line a muffin tin with paper liners
Put the flour, sugar, baking powder, and salt in a bowl and mix them together
Add the coconut milk, vegetable oil, vanilla extract, and egg to a different bowl and mix them together using a whisk
Add the wet ingredients to the dry ones and mix them together just until they are mixed
Fill up about two thirds of the way to the top of each muffin cup with batter
On top of each muffin, sprinkle the sweetened flakes of coconut
After the oven is hot, bake the muffins for 18 to 20 minutes, or until a toothpick inserted into the middle comes out clean
Take the muffins out of the oven and let them cool in the pan for a few minutes
Then, move them to a wire rack to cool completely
