Amy's Mint Chocolate Cupcakes
Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 1/4 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp pure vanilla extract
- 1/2 cup buttermilk
- 1/2 cup hot water
- 1/2 cup mini chocolate chips
- 1/4 cup finely chopped fresh mint leaves
- 1/4 cup crushed mint candies for garnish
Instructions:
Preheat your oven to 350F 175C and line a cupcake pan with paper liners
In a bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt
In another bowl, cream together the softened butter and granulated sugar until light and fluffy
Beat in the eggs one at a time, then stir in the vanilla extract
Add the dry ingredients to the wet ingredients in three parts, alternating with buttermilk, beginning and ending with the dry mixture
Mix until just combined
Pour in the hot water and stir until the batter is smooth
Be cautious; the batter will be thin
Fold in the mini chocolate chips and finely chopped fresh mint leaves
Divide the batter evenly among the cupcake liners, filling each about 2/3 full
Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean
Allow the cupcakes to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely
Once cooled, garnish with crushed mint candies
